We currently produce two organic extra virgin olives oils: the Original and the Limited Edition. Think of one as an olive oil for every meal, the other as a finishing oil to elevate even the simplest dish – and both as a requirement for your pantry!

OLIVE OIL

Organic
grown in a fully certified organic grove and pressed on-site.

Extra Virgin
we conduct chemical and sensory (organoleptic) analyses after every harvest to ensure our olive oil has no sensory defects and an acidity well below the required 0.08% threshold for being certified Extra Virgin.

Cold Pressed
the temperature throughout our milling process never exceeds 26C/77F, ensuring maximum preservation of nutrients and antioxidants.

High Phenolic
our Limited Edition is high in polyphenols, an antioxidant compound unique to olive oil that has been found to have cardio- and neuro- protective properties. Our polyphenol content is significantly above the required criteria to receive a European Union-approved Health Claim as to its benefits.

Award Winning
our products have been awarded the Gold distinction in numerous prestigious olive oil competitions, including in London, Canada and Greece.

ORGANIC

OUR PROCESS

We hand-pick our olives in early October while the olives are still quite ripe and green, allowing us to preserve the antioxidant benefits found naturally in olive oil. The olives are then pressed on our premises within 4-6 hours of harvesting and maintained at temperatures below 26oC/77oF. This process is optimized to minimize the opportunity for defects to develop through external factors such as humidity, heat and bacterial development, allowing our olive oil to come to you  fresh, flawless, and with a rich bouquet of aromas and flavors.

Pairing
Agrilia is incredibly versatile – most often used with salads, it is also pairs well on grilled vegetables or meat, in ceviche, or on top of soft cheeses, pizza and pasta. The Limited Edition is best served raw as a finishing oil on top of any meal to ensure you gain the maximum antioxidant benefits.

Tasting Profile
Upon tasting, you will first encounter an intense green fruity aroma dominated by notes of herbs, artichoke, tomato and green almond followed by a medium bitter and peppery aftertaste.
